Well, I'm not sure these comparisons are germane.
Let's take a more mundane example. You are my best friend. You drop by and you are feeling thirsty. You ask, "Can I have a beer?" because you know I generally have beer in my fridge. However, I had a small poker party last night and I think they cleared me out. I could express my answer in either of two ways. If you feel there's a difference in meaning between them, please tell me what you think it is:
"I don't believe there's beer in my fridge."
"I believe there's no beer in my fridge."
If "I Believe there's no beer in my fridge" is my religion, then "I don't believe there's beer in my fridge" is my religion as well.
But Believing there's beer in my fridge is not necessarily a religion.
I am extremely accomplished at not playing the cello. It's is a great hobby of mine, which I undertake at all moments of my life so far.
That's a bit of a strawman, don't you think? The point is, the lack of something is not just another version of that something. It may be in a similar class, such as the tv being off, but preferring the tv to be off is not the same thing as watching Jersey Shore and actually enjoying it.
I have never seen Unseen therefore I am an Aunseenist and I believe in not seeing that which is unseen.

No, I think it's ridiculous for atheists to say essentially "There is no God, but I don't believe that."
It's not belief we want to deny, it's irrational faith-based belief. I have no trouble saying that I believe God doesn't exist based on the lack of evidence nor in defending that position. I don't think there is any problem.
Are you guys saying that I can't believe there's no elephant in my living room? I don't see any evidence of one, so I have no problem defending that belief. Or are you saying I can't really have a belief regarding the absence of that elephant?
I being a rational realist am forced to accept the FACT that there are no doGs and therefore must state where needed "There are no doGs."
I am also forced to state where needed "There are no Mermaids, Leprechauns, etc."
