Let's see.. death for three days then brought back to live. You're right. He's more a vampire. The zombie transformation seems to be instant. And it also explains the blood thing. Though it doesn't explain the eating of the flesh.. So maybe he's just a ghoul. But then they have an aversion to sunlight, too... mmmm, for sure he's one of the undead. Just which one I'm not quite sure.... Though if the holy light  was really sparkles, he'd be the first Twilight vampire and that would explain everything..
