Breakfast?? How do we not have a breakfast category until now? OOPS!
Breakfast on the go!
8 small eggs. 1 cup shredded cheddar cheese. 2 chopped Jalapeño peppers. 1 clove garlic. 4 chopped sausage links. Salt, pepper, lemon zest to taste. Whisk all ingredients together an pour into greased cupcake pan. Bake at 350d/f for 25 minutes, or until firm all the way through. Omelets on the go. Breakfast in a hurry sorted!
There are a million variations of this little meal, too.
I'm currently cooking one with spinach and brie cheese!
