Wow - you love your garlic - Why so many and which one is your favorite?
I've been dissapointed with the quality of the garlic at the markets for a few years now. There was a time that I never had to consider how fresh a head of garlic was, they were always heavy and flavourful but now, when I buy garlic I have to sift through and search for a head with a bit of weight in it because they always feel so hollow and then I'll be lucky if its got much flavour.
Whats going on?

Garlic needs to be stored at a cool temp (60-65 Deg F) with moderate humidity. The time of year you buy garlic will have a bearing on quality. Mid-summer being the best time for fresh garlic at a farmer's market say.

Most of the garlic in Australia is coming in from China now. I dont know what chemicals they use or how long its stored for but its just getting harder to find good home grown produce without having to make a special trip to the boutique grocer
